Our Cheese

Our raw lactic sheep's cheese is produced by hand in small batches, with milk from our own flock

Longswales Cheese is a soft artisan cheese made with raw milk from our small flock of dairy sheep. Our Lacaune-Friesland ewes graze all year round on land close to the dairy in Lower Wensleydale on the eastern edge of the Yorkshire Dales.

The ewes are milked every morning from late May to mid-September. The milk is carried straight to the dairy where Long Swales cheese is made by hand in small batches of 10 each day. Once the cheese has been left to mature it is wrapped and made ready for our customers.

We are working hard to improve the quality of our low-input grassland, which is perfect for barn owls and hares as well as sheep! The tall hedges bordering the fields provide food for pollinating insects, nest sites for birds and shelter for small mammals. The hedges join up to a new woodland alongside the river that we planted in 2022.
